An elegant appetizer for two, served in martini glasses.
2 steamed 1 lb. lobsters
1 cup shredded spring mix
1 tomato, diced
2 slices Eddie’s thick bacon, diced
1 avocado, diced
1 squeeze of lemon
2 T. Marie’s Thousand Island Dressing
To prepare, sauté the bacon until crisp, drain and set aside. Pick the lobster meat from the tail and chop in bite-sized pieces. Carefully pull the claw meat from the shell, keeping the claw meat intact.
Take 2 martini glasses, layer with spring mix on the bottom, add some diced tomato, add a teaspoon of Marie’s Dressing, top with crumbled bacon and lobster meat. Squeeze some lemon juice over the avocado and place diced avocado over the lobster meat.
Finish with a dollop of Marie’s Thousand Island Dressing. Take the claw and drape it over the side of the martini glass. Pair with Calera Chardonnay.

Turn this appetizer into a tropical main dish salad, simply by serving another 2 cups of spring mix onto a large platter with the rest of the ingredients, then topping with fresh sliced mango.
