Cedar Plank Salmon

  • Cook Time: 25 minutes
  • Serves: 4

A delicious and easy way to impart the unique, sweet and smoky flavor of cedar.


Ingredients

1 untreated cedar plank, 8 inches x 12 inches

1-1/2 t. fresh thyme

1 T. grated lemon peel

1/2 t. sugar

1-1/2 t. coarse Kosher salt

1 t. fresh ground black pepper

2 lbs. fresh salmon filet, cut in 4 pieces

Slices of lemon and sprigs of fresh thyme for garnish

 

To Prepare

Submerge cedar plank in water for 2 hours. In a small bowl, mix together the next 5 ingredients. Rub spice mixture on salmon, generously, so that the surface is covered. Allow to marinate with the rub for 30 minutes.

Meanwhile, light grill to medium high. Remove plank from the water and place filets on the cedar plank, skin side down. Transfer the plank to the hot grill rack. Cover grill and cook for 20-25 minutes.

When salmon is done, transfer plank to a metal serving platter, being sure that the cedar is not burning. If cedar is burning, keep a spray bottle with water handy to extinguish any flames. Garnish with lemon and thyme sprigs.

To Serve

Pair with Bogle Pinot Noir.



Eddie's Recipe Tip:

Wash off the used cedar and break it up in pieces. Throw the pieces directly on hot coals when grilling, to impart the wonderful cedar flavor to other foods.
