To paraphrase Pillsbury, “nothing says lovin’ like cookin’ from the oven”, which is an important thought to keep in mind on Valentine’s Day. Cooking a lovely romantic dinner for your sweetheart is one of the most endearing things you can do, and here’s a meal you can shop for tonight and make tomorrow. It starts with a slightly different take on one of the most tender cuts of beef and ends with a dessert that will melt hearts.
White Chocolate and Cherry Soufflé
A Radio Kitchen Original Recipe
2 tbs unsalted butter
2 tbs white sugar
3 egg yolks
¼ cup scalded milk
¼ cup white chocolate chips
1 tbs cherry jam
2 tbs rehydrated dried cherries, coarsely chopped
3 egg whites
¼ tsp cream of tartar
1. Melt the butter in a medium sauce pan, then add the sugar. Stir over low heat.
2. Add the egg yolks and whisk until incorporated. Cook over low heat for about 2 minutes, whisking constantly. Add the scalded milk and whisk over low heat until the mixture thickens. Add the white chocolate chips and stir until they melt.
3. Melt the cherry jam in the microwave. Toss the chopped cherries into the jam, mix well, and then pour into the egg mixture. Whisk again over low heat. When thoroughly blended, remove from heat, and set aside to cool.
4. Beat the egg whites in a clean bowl, and add cream of tartar as they start to build up. Beat until they form peaks.
5. Gently fold the egg whites into the chocolate/cherry mixture, adding about a third of the egg whites at a time. Portion the mixture into 4 small soufflé dishes, which you have greased with butter and coated with white sugar.
6. Put the soufflé dishes on a baking pan and place it near the bottom of a pre-heated 325 degree oven and cook for about 25 minutes. Allow the soufflés to rise and brown lightly on the top. Serve immediately.
