We really love creative cooking on Radio Kitchen and there’s never been a better time for it than right now. Now if you’re into pushing the envelope, may we suggest a visit to a little spot in Canton where some very exciting things are happening. It’s called Jack’s Bistro and it’s located at 3123 Elliott Street, (the phone number is 410-878-6542.) We invited chef Ted Steltzenmuller on the show to talk about his ideas for the restaurant.
Ted loves mixing and matching the world’s best cuisines. He also has a solid respect for good old American cooking, and is willing to let one influence the other. A perusal of the menu saw Southwestern and Middle American ideas blended with North African, Indian, Italian, Scandinavian and Irish. He will offer up some surprises, including mac and cheese with chocolate, a cheeseburger soup and an Ahi tuna salad with jello. But there’s a more serious side as well, and the Rissotto Indienne that we tried was one of the best versions of that dish we’ve ever come across.
