As holidays go, we're coming up on one of the nicest, perhaps one of the most sentimental. Mother's Day is just around the corner and it is a wonderful time to pay tribute to the woman who got each of us started…our mom. One of the major tenets we hold on Radio Kitchen is that cooking is all about love - Which means for this coming Mother's Day, we should be cooking up a storm for the dear ladies.
Fabulous Strawberry Muffins Recipe

2 1/2 C. flour
1/2 C. sugar
2 t. baking powder
1 t. baking soda
1/2 t. salt
1 1/2 C. buttermilk
1/3 C. melted butter
2 eggs, slightly beaten
1 t. vanilla
1 pint fresh strawberries, hulled and chopped
additional sugar for topping
Preheat oven to 400°F. Spray muffin tin with non-stick cooking spray or line muffin cups with paper cupcake liners.
In a large bowl combine flour, sugar, baking powder, baking soda and salt; stir until all ingredient are well-blended. In another bowl, whisk together the buttermilk, butter, eggs and vanilla. Make a well in the middle of the dry ingredients and pour liquid mixture in and the strawberries.
Using a large spoon, gently fold ingredients just until moist; do not over-mix.
Spoon the batter evenly into 12 muffin cups. Sprinkle each muffin with about 1/2 teaspoon sugar, if desired. Bake for 20-25 minutes.
Makes 12 muffins
