Like many Americans my doctor suggested that I pay attention to my diet so that I could eat mores sensibly. In the past my reaction has been to sulk and pout about the strictures of a diet. But this time I’ve tumbled onto something that has made healthy eating greatly appealing.
The glycemic index measures the impact carbohydrates have on blood sugar levels. High index foods produce glucose very quickly and can cause insulin spikes. Low index food digest more slowly and produced a more measured increase in blood sugars, which is much healthier for you.
What we’re tickled about is how many of the good low index foods are among our favorite things to eat. Most fresh vegetables, whole wheat breads and pastas, grains like barley and lentils.
