What do you do when you're hungry, but are too tired, too cold and/or too lazy to start cooking dinner at the end of the day? Sure, you can order pizza or open a box of cereal, but that just doesn't feel like dinner, nor does it satisfy your mind, your stomach or your palate.

Here's the solution: Eddie's rotisserie chicken. This is a step beyond Rotisserie Chicken 101. First and foremost, you can eat one of our freshly roasted rotisserie chickens, as is, and be perfectly happy. Of course, you can make chicken salad or chicken barbecue with the leftovers. Or, you can venture outside the box with these recipe ideas that take no more than 30 minutes to prepare.

Try our recipe for warm, comforting Chicken and White Bean Soup. It's so easy to prepare. If you don't have fresh sage, use 1 tsp. of dried sage. If you don't have baby spinach, substitute any leafy green that you have in the fridge. Try adding the tough rind from a wedge of leftover Parmesan into the pot for a richer, nuttier and very Tuscan flavor.

Or, if you like to live on the edge and love exotic, spicier flavors, try our recipe for Tandoori Chicken Tostadas. These pair rotisserie chicken with Tandoori Garlic Picnic Gourmet Spread.
