Ancho Chili Lime Brining Kit

4 chicken breasts (this recipe also works well for whole chicken, legs, thighs, or even pork chops!)
To Prepare
Begin with the Brine:
- Add half the bag of brine to 2 cups of boiling water
- Let sit for 10 minutes and add ice to cool
- Pour brine onto chicken breasts or other protein of choice, and chill for approximately 1 hour per lb of protein
- Remove protein from the brine and dry off any excess to prepare for grilling
Fire up the Grill:
- To cook the chicken, place a griddle pan over a medium high heat or heat the barbecue to the medium high setting
- Grill chicken for 3 to 4 minutes each side (if using bone-in chicken cook a little longer)
- Transfer the chicken to the oven for 10-12 minutes, or until the chicken has a core temperature of 165°F—this finishing process prevents the chicken from drying out and preserves the juiciness
