Ancho Chili Lime Grilled Chicken

  • Prep Time: 5 minutes
  • Cook Time: 15-20 minutes
  • Serves: 4

Ingredients

  1. Ancho Chili Lime Brining Kit

  2. 4 chicken breasts (this recipe also works well for whole chicken, legs, thighs, or even pork chops!)

To Prepare

Begin with the Brine:

  • Add half the bag of brine to 2 cups of boiling water
  •
  • Let sit for 10 minutes and add ice to cool
  •
  • Pour brine onto chicken breasts or other protein of choice, and chill for approximately 1 hour per lb of protein
  •
  • Remove protein from the brine and dry off any excess to prepare for grilling

Fire up the Grill:

  • To cook the chicken, place a griddle pan over a medium high heat or heat the barbecue to the medium high setting
  •
  • Grill chicken for 3 to 4 minutes each side (if using bone-in chicken cook a little longer)
  •
  • Transfer the chicken to the oven for 10-12 minutes, or until the chicken has a core temperature of 165°F—this finishing process prevents the chicken from drying out and preserves the juiciness

To Serve

Complete your cookout with classic sides like Broccoli Salad, Crab & Corn Coleslaw or new chef creations like Asian Chopped Salad and Asparagus & Feta Salad. For dessert, you can't go wrong with refreshing Key Lime Cheesecake or our heavenly Salted Caramel Brownies!

Eddie's Recipe Tip:

Kick up the flavor by adding 2-3 tbs. dark rum!
