BAKED HONEYCRISP APPLES

  • Prep Time: 15 minutes
  • Cook Time: 50 minutes
  • Serves: 4

Fill your kitchen with warm and cozy aromas of cinnamon, apples and butter, as you prepare this easy autumn recipe.

Ingredients

4 large honeycrisp apples

1/3 c. brown sugar

1 t. cinnamon

1 t. orange zest

1/4 t. ground ginger

1/3 c. walnuts, pecans or hazelnuts, chopped

1/4 c. golden raisins, chopped

4 t. unsalted butter

1 c. boiling water

To Prepare

Heat oven to 375°.  Wash and dry apples. Remove the stem and the core of each apple leaving the bottom 1/2 inch intact. Scoop out a well in each apple about 1 1/2 inches in diameter, enough space to stuff each apple.

Mix together brown sugar, cinnamon, orange zest, ginger, raisins and nuts. Stuff each apple with nut mixture. Top each apple with a teaspoon of butter. Place apples in a baking dish just large enough to hold them. Pour boiling water into the bottom of the baking dish.

Bake for 40-50 minutes until apples are cooked through, tender but not mushy. As the apples cook, baste with the juices from the baking dish. Cover with foil if the apples become too brown as they cook.

To Serve

Serve warm with Taharka Brothers vanilla ice cream.
