Black-Eyed Susan

Originally created by the bar staff at Baltimore’s Emerson Hotel, there have been many variations over the decades—this rendition comes from David Solmonson, co-editor of 12bottlebar.com and co-author of The 12 Bottle Bar cocktail guide.

Ingredients

2 ounces pineapple juice
1 ounce rye whiskey (Eddie’s suggests James E. Pepper 1776)
1 ounce white rum (Eddie’s suggests Cane Run)
1 ounce orange juice
1/2 ounce freshly squeezed lemon juice
1/2 ounce rich simple syrup*
1 teaspoon orange liqueur (Eddie’s suggests Gran Gala)
1/2 ounce black rum, to float (Eddie’s suggests Goslings Black Seal)

To Prepare

Add all ingredients except for black rum to a glass and stir to combine. Fill a Collins or other tall glass with crushed ice. Add the mixed drink to the glass with ice. Top with the float of black rum.

*To make rich simple syrup, combine two parts sugar and one part water in a pot. Set heat to medium-low and stir until sugar dissolves. Chill before using.

To Serve

Garnish as desired and serve with a straw.

Eddie’s Recipe Tip:

Inspired by the Maryland state flower (which is also used for the blanket that drapes the winning horse), this iconic drink has been the “official cocktail” of the Preakness, since 1936.
