In a large frying pan, bring 6 cups of water to a boil. Add chicken, cover and reduce temperature to medium low. Simmer chicken breasts until opaque and tender, about 25 minutes. Allow to cool, then shred and finely chop. Heat oven to 375°.
Spread cream cheese evenly along the bottom of a 9×13 baking dish. Mix together chicken, blue cheese dressing and hot sauce. Pour over cream cheese and top with Jack cheese. Bake for 20 minutes until cheese is melted and bubbly.
Serve warm with baguette slices, carrot and celery sticks.
