Caramelized Apple Grilled Cheese Sandwich

Tart, sweet, satisfying and delicious.

Ingredients

2 T butter
2 T brown sugar
1 dash of cinnamon
2 Granny Smith apples, peeled, cored and sliced thin
1/2 c. Cracker Barrel Sharp (or Extra Sharp) Cheddar, shredded
4 slices The Breadery San Francisco Sourdough or 3-Seed Sourdough Artisan Bread
2 T butter (for bread)

To Prepare

Prepare bread slices by generously buttering one side of each slice. Melt 2 T butter in medium frying pan. Add sugar and cinnamon and cook until bubbly.

Add apples and sauté until tender, about 5 minutes. Set aside.

Assemble each sandwich by piling cheese, apples (and a bit more cheese) between two slices of bread, buttered sides out.

In large frying pan, grill each sandwich until golden brown on both sides, about 2-4 minutes per side.

To Serve

Cut sandwiches in half diagonally and serve immediately. Round out the meal with a spicy arugula salad and butternut squash soup.

Eddie’s Recipe Tip:

For a more tart variation use Granny Smith apples and try adding blue cheese for a flavor boost.
