Chef Marie’s Chicken Divan

  • Serves: 6 plus leftovers

Perfect for busy weeknights—and just as delicious when reheated!

 


Ingredients

1 whole Eddie’s rotisserie chicken, pulled and shredded
3 heads of broccoli, stems removed, cut into bite-sized pieces
1 can, cream of mushroom soup
2 T curry powder
2 T lemon juice
2 T Worcestershire sauce
2 cups mayonnaise
1 cup sour cream
2 cups shredded cheddar
1 cup seasoned bread crumbs

To Prepare

Heat oven to 325 degrees. Prepare a large, deep baking dish with cooking spray. Add chopped broccoli and shredded chicken to the dish, then set aside.

In large mixing bowl, stir together mushroom soup, curry powder, lemon juice, Worcestershire sauce, mayonnaise and sour cream. Pour sauce into baking dish and spread evenly to cover the broccoli and chicken. Sprinkle shredded cheddar over sauce. Top with bread crumbs. Cover with foil and bake for 45 minutes.

Remove the foil and let cook an additional 3-4 minutes, to crisp the top.

To Serve

Serve immediately, alongside Eddie’s rice pilaf or traditional stuffing.
