Grilled Lamb Burgers w/ Portobella Mushrooms

  • Serves: 4

No bun is needed for these Mediterranean-style burgers, perfect for summertime outdoor entertaining.


Ingredients

1 1/2 lbs. ground lamb

1/2 c. crumbled feta cheese

1 T. fresh oregano, chopped

1 t. dried oregano

2 cloves garlic, crushed

Coarse kosher salt

Fresh ground pepper

4 portobella mushrooms, stem and gills removed

1 large tomato, sliced 1/2" thick

1 red onion, sliced 1/2" thick

1/3 c. balsamic vinegar

1/2 c. + 1 T. olive oil

1 c. Cibo Naturals Basil Pesto

To Prepare

In a large bowl combine lamb, feta, fresh oregano, dried oregano, garlic, salt and pepper. Form burgers, each about 1/3 lb. Set aside. Whisk together balsamic vinegar with 1/3 c. olive oil, salt and pepper. Brush portobellas generously with marinade. Save extra for basting.

Prepare grill for medium-high direct heat. Brush grill with oil to prevent sticking or use non-stick spray for grilling. Place burgers, mushrooms, tomato slices and onion slices on grill. Baste vegetables with reserved marinade. Grill burgers for 6-7 minutes on each side for medium-rare (130ºF internal temperature). You may need to grill a few minutes longer depending on the thickness of the burgers. Grill portobellas until tender, about 5 minutes on each side, and grill the onion and tomato until grill marks appear, about 4 minutes on each side.

 

To Serve

Place portobellas on a platter. Top each with a burger, a slice of onion and a slice of tomato. Top with a dollop of fresh basil pesto.
