Maple Glazed Pork Tenderloin

Ingredients

2.5 lbs. pork tenderloin
1 c. pure maple syrup
3 T. dijon mustard
2 1/2 T. cider vinegar
2 1/2 T. soy sauce
salt and pepper to taste

To Prepare

Preheat oven to 350°. Spray a shallow roasting pan with non-stick cooking spray. In a small bowl, stir together syrup, mustard, vinegar, soy sauce, salt and pepper. Place the tenderloin in the prepared pan and spread the mixture over it.

Roast uncovered until the internal temperature of the pork tenderloin reaches 155°. This should take approximately an hour. Remove from oven and allow to rest for 10 minutes before carving.

To Serve

Serve warm with Eddie’s roasted yam wedges.
