Ole Guacamole

A very basic recipe with fun variations to make it your own.
Ingredients
2 ripe Haas avocados, peeled, pitted and cubed
1/4 c. sweet onion, minced
1 small jalapeno, seeded, minced
Juice of 1 lime
1 T. fresh cilantro, chopped fine
Dash of hot sauce
Coarse kosher salt to taste
To Prepare
In a medium bowl, mash avocado with a fork. Add all ingredients and mix well.
Jazz up this basic recipe with these add-ons:
Chipotle & Roasted Garlic: Mince 1 chipotle pepper with 1 head of roasted garlic and a dash of cumin.
Bacon, Scallion & Tomato: Add crispy bacon, chopped scallion and diced grape tomatoes.
Pomegranate & Maple: Add pomegranate arils and a drizzle of maple syrup.
Crab & Scallion: Add 1/2 cup of crab meat, chopped fresh scallion and a healthy dose of Old Bay.
Lobster, Mango & Cilantro: Add 1/2 cup of lobster meat, diced mango and an extra handful of cilantro.
Shrimp & Roasted Corn: Add steamed shrimp, pan-roasted corn, cumin and a drizzle of honey.
To Serve
Serve room temperature with tortilla chips.
Pair with 123 Tequila Anejo No. 3.
