Stir-Fried Garlic Asparagus

Although traditionally a spring vegetable, this year-round recipe is perfect anytime pencil-thin asparagus is available.

Ingredients

1 ½ lbs. asparagus (thinnest spears available)
1 T. vegetable oil
1 tsp. kosher salt
3 garlic cloves, minced
1 T. grated ginger
1 T. fresh orange zest
coarse-ground black pepper

To Prepare

Trim/remove the tough bottoms of each asparagus spear. Cut the remaining spears into 2″ long pieces.

Heat oil in stovetop wok or large skillet over very high heat. When oil is nearly smoking, add asparagus and toss to coat—stirring rigorously for approximately 1 minute. When asparagus appears bright green, sprinkle with salt and add garlic, ginger and orange zest. Stir-fry for up to 1 minute more.

To Serve

Transfer to a serving platter and top with fresh-ground black pepper. Serve immediately.

Eddie’s Recipe Tip:

 

If thin asparagus is not available, you can substitute small or medium asparagus, sliced in half, lengthwise. Try adding red pepper flakes for a spicy kick.
