Tailgating At Home
Tailgating at a football game is an American tradition, and some people take it to amazing extremes, firing up their grills at the break of dawn. But even those who watch the games from the warmth of their family rooms still like to enjoy good, hearty and fun “tailgating” food.
Wings are a must, and if you’re feeding a crowd, you can’t beat Eddie’s 3-foot or 5-foot subs, especially our Italian Cold Cut, complete with potato salad and coleslaw.
As the weather gets colder, we tend to want something warm and satisfying as we enjoy the game. Casseroles are the answer. They feed a crowd, they’re easy to prepare, and you can make them ahead. Our chefs prepare some unbelievable lasagnas.
One favorite is the Meatball and Italian Sausage Lasagna. If you’re a vegetarian, our Spinach and Roasted Red Pepper Lasagna will easily satisfy both herbivore and carnivore alike. Serve it with our classic Caesar Salad and you’ve got a great half-time meal.
Another popular dish is our Game Day Mexican Casserole. It’s a delicious cross between nachos and lasagna. We start with corn tortillas and layer refried beans, enchilada sauce, ground beef and cheese. Get creative and make one at home to keep in the freezer until game day (find the recipe here). You can substitute shredded rotisserie chicken or ground turkey for the beef.
When you’re ready to serve, top with sour cream, guacamole and chilies. Make it as mild as you want, or add an extra kick with a few chipotles!
