Rainbows of Color
As March rolls in, we know that spring is just around the corner. We can almost taste it: fresh herbs, crisp vegetables, and lots and lots of green. Fresh asparagus is always associated with the spring season. Asparagus, though we love you, we have other natural beauties at Eddie's that will just "wow" you, making vegetables the main attraction at your table.
Keeping it green, we have gorgeous black kale, crisp fennel bulb and beautifully full artichokes. However, our newest attraction is the organic rainbow carrots, a stunning medley of color. Naturally sweet, these little gems easily caramelize when roasted to make a simple side dish the star of the meal.
Our recipe for Roasted Rainbow Carrots could not be any easier. Try switching up the basic recipe with a few tasty, but not so ordinary, variations: for an Indian twist, season with garam masala and maple syrup, topped with toasted hazelnuts and orange zest. Or, try tossing the carrots with pomegranate molasses, brown sugar and ginger for an exotic Middle Eastern flavor.
